Date & Coconut Balls

These little Date & Coconut Balls are great lunchbox treats that take 10 minutes to make, and have only 6 ingredients. Best of all they are refined sugar free, grain-free and dairy-free. The perfect on the go food that is filled with good fats, omegas, fiber and protein.

Date & Coconut Balls
Yields 10 balls

½ cup of pitted dates
½ cup of coconut flour
½ cup of smooth GMO FREE unsweetened peanut butter
2 tablespoons of chia seeds
2 tablespoons of honey
¼ cup of desiccated coconut
Pinch of pink salt

Simply add all the ingredients to your food processor, and then whiz it together, giving your machine a break every minute or so until you have a sticky doughy consistency (it doesn’t need to be 100% smooth).

Then use your hands to shape the ‘dough’ into ping-pong sized balls, once all the dough has been formed into balls, roll them through the desiccated coconut and then serve, or store them in a cling film covered dish in the fridge. Use within 3-4 days.
